
Ingredients:
- 4 medium potatoes, peeled and shredded
- 1 small onion, finely chopped (optional)
- 1/2 cup shredded cheddar cheese (or your favorite)
- 1 egg
- 2 tablespoons all-purpose flour (helps bind)
- Salt and pepper to taste
- 1/2 teaspoon garlic powder (optional)
- 1/4 cup chopped bell peppers or parsley (optional for color)
- Cooking spray or a bit of oil
Instructions:
- Preheat oven to 200°C (400°F).
- Grate the potatoes, then place them in a clean towel and squeeze out excess water.
- In a large bowl, mix:
- Shredded potatoes
- Onion
- Cheese
- Egg
- Flour
- Salt, pepper, garlic powder
- Peppers or parsley if using
- Spray or grease a muffin tin well.
- Scoop the mixture into each muffin cup. Press it down gently to form a patty shape.
- Bake for 25–30 minutes, or until golden and crispy on top.
- Let cool for a few minutes, then gently remove from the tin.
- Serve with sour cream, yogurt dip, or garlic sauce.
Tips:
- You can replace potatoes with sweet potatoes or zucchini for variation.
- Add cooked bacon bits or turkey for extra flavor.
