• 1 cup shredded mozzarella or cheddar cheese
• 1 egg
• 1/2 cup breadcrumbs (plus more for coating)
• 1/4 cup chopped green onions (optional)
• Salt and black pepper to taste
• 1/2 tsp garlic powder (optional)
• Oil for frying
Instructions:
1. Mix the Filling:
• In a large bowl, combine mashed potatoes, cheese, egg, 1/2 cup breadcrumbs, green onions, and seasoning.
• Mix well until all ingredients are fully incorporated.
2. Shape the Cakes:
• With your hands, form small patties (like burger-sized disks).
• Coat each one lightly with breadcrumbs for extra crunch.
3. Fry the Cakes:
• Heat oil in a skillet over medium heat.
• Fry patties for about 3–4 minutes per side, or until golden brown and crispy.
4. Drain and Serve:
• Place the cooked cakes on a paper towel to drain excess oil.
• Serve hot with sour cream, garlic dip, or your favorite sauce.
