
Ingredients:
1 pound lean ground beef (instead of pork)
1 tablespoon olive oil
1 cup uncooked long-grain rice
2 cups beef broth (no wine, no alcohol)
1 can (10.5 oz) cream of mushroom soup
1 cup fresh mushrooms, sliced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
Chopped fresh parsley (for garnish)
Instructions:
Brown ground beef in olive oil over medium heat. Drain fat.
Stir in uncooked rice, beef broth, cream of mushroom soup, mushrooms, garlic powder, onion powder, salt, and pepper.
Transfer to a greased baking dish. Cover tightly with foil.
Bake at 350°F (175°C) for 45 minutes.
Remove foil, sprinkle cheddar and mozzarella cheese generously over top. Bake uncovered for 15 minutes until cheese is melted, bubbly, and golden-brown.
Sprinkle with chopped parsley for a fresh finish. Serve hot and enjoy that gooey, melty bite.
