Ingredients:
4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried Italian herbs
Salt and pepper to taste
2 large eggs
1 tablespoon Dijon mustard
2 tablespoons olive oil

Directions:
Begin by preheating your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.

In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix well to ensure an even distribution of the ingredients.

In another bowl, whisk together the eggs and Dijon mustard until well combined.

Take each chicken breast and dip it first into the egg mixture, allowing any excess to drip off, then coat it thoroughly in the Parmesan breadcrumb mixture, pressing gently to adhere.

Place the coated chicken breasts onto the prepared baking sheet. Drizzle the olive oil over the top of the chicken to help it crisp up during baking.

Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the crust is golden brown. An internal temperature of 165°F (75°C) should be reached for safe consumption.

Once done, remove from the oven and let rest for a few minutes before serving. This dish pairs wonderfully with a fresh salad or steamed vegetables.
