
Ingredients:
500g white fish fillets (cod, haddock, or basa)
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1 tsp garlic powder
1 tsp paprika
1/2 tsp black pepper
1 tsp salt
1 cup cold soda water (or cold sparkling water)
Oil for deep frying
Fresh parsley (for garnish)
Lemon wedges (for serving)
Instructions:
- Prepare the Fish: Pat dry the fish fillets and cut them into desired pieces.
- Make the Batter: In a bowl, mix flour, cornstarch, baking powder, garlic powder, paprika, black pepper, and salt. Gradually add cold soda water and whisk until you get a smooth, lump-free batter.
- Heat the Oil: In a deep pan, heat oil to 180°C (350°F).
- Coat the Fish: Dip each fish fillet into the batter, ensuring it’s fully coated.
- Fry the Fish: Carefully place the battered fish into the hot oil and fry for about 4-5 minutes until golden brown and crispy.
- Drain & Serve: Remove and place on a paper towel to drain excess oil.
- Garnish & Enjoy: Sprinkle fresh parsley and serve hot with lemon wedges and fries.
