
Ingredients:
For the filling:
8 fresh peaches, peeled, pitted, and sliced (or 2 large cans of sliced peaches, drained)
1 cup granulated sugar
½ cup light brown sugar
½ teaspoon cinnamon
¼ teaspoon nutmeg
1 tablespoon lemon juice
2 teaspoons cornstarch
1 teaspoon vanilla extract
½ cup water (if using fresh peaches)
For the batter:
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
¼ teaspoon salt
1 cup milk
½ cup unsalted butter (1 stick), melted
Instructions:
Preheat oven to 375°F (190°C).
In a saucepan, combine peaches, sugars, lemon juice, cinnamon, nutmeg, vanilla, and cornstarch. Add ½ cup water if using fresh peaches.
Simmer over medium heat for about 8–10 minutes until thick and bubbly. Set aside.
In a bowl, whisk together the flour, sugar, baking powder, and salt.
Stir in milk until smooth.
Pour melted butter into the bottom of a 9×13 baking dish.
Pour the batter over the butter (do NOT stir).
Spoon the peach mixture on top evenly.
Bake for 40–45 minutes, or until golden and bubbling.
