Savory Cabbage and Zucchini Patties

  • 2-3 tablespoons olive oil (for frying)

STEP 1: PREPARE THE VEGETABLES

  1. Shred and Grate: Shred the cabbage and grate the zucchini. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. This step is crucial to ensure the patties hold together well.
  2. Combine Vegetables: In a large mixing bowl, combine the shredded cabbage, grated zucchini, chopped onion, minced garlic, and chopped parsley.

STEP 2: MIX THE INGREDIENTS

  1. Add Eggs and Cheese: Add the eggs and grated Parmesan cheese (if using) to the vegetable mixture. Mix well to combine.
