Bruschetta Chicken Pasta 🍅🍝
A fresh and flavorful pasta dish featuring tender chicken, juicy tomatoes, and a balsamic glaze that captures the essence of classic bruschetta.
You will need:
2 cups cooked chicken, diced
8 oz pasta (penne or rigatoni)
2 cups cherry tomatoes, halved
2 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup balsamic vinegar
2 tbsp olive oil
Salt and pepper to taste
Grated Parmesan cheese (for garnish)
Directions:
Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.
Stir in cherry tomatoes and cook until they begin to soften. Add the cooked chicken, balsamic vinegar, salt, and pepper.
Toss the cooked pasta with the chicken and tomato mixture. Remove from heat and stir in fresh basil.
Serve with a sprinkle of Parmesan cheese.
