Buckeye Skillet Cookie 🍪🍫🥜
A decadent skillet cookie with a rich peanut butter layer, perfect for sharing and best served warm with a scoop of ice cream.


Ingredients:


For the Cookie Dough:
1 cup butter, softened
1 1/2 cups Imperial Sugar Light Brown Sugar
1/2 cup Imperial Sugar Extra Fine Granulated Sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips
1/2 cup peanut butter chips
For the Peanut Butter Layer:
1 cup creamy peanut butter
1/2 cup Imperial Sugar Confectioners Powdered Sugar
Optional Topping:
Ice cream


Instructions:—


Preheat Oven:
Preheat your oven to 350°F (175°C).
Prepare Cookie Dough:
Cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until combined.
Stir in the chocolate chips and peanut butter chips.
Prepare Peanut Butter Layer:
Mix together the creamy peanut butter and powdered sugar until smooth.
Assemble the Skillet Cookie:
Press half of the cookie dough into the bottom of a greased 10-inch skillet.
Spread the peanut butter mixture over the cookie dough layer.
Top with the remaining cookie dough, pressing it to cover the peanut butter layer.
Bake:
Bake for 25-30 minutes, or until the edges are set and the center is slightly gooey.
Serve:
Let the skillet cookie cool slightly before serving.
Serve warm, optionally with a scoop of ice cream.
