Pasta e Fagioli Recipe

Warm up on a chilly day with a comforting bowl of this hearty and flavorful Pasta e Fagioli soup! It’s a classic Italian dish that’s easy to make and packed with beans, pasta, and vegetables.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 (15-ounce) can of diced tomatoes, undrained
  • 1 (15-ounce) can of cannellini beans, rinsed and drained
  • 1 (15-ounce) can of Great Northern beans, rinsed and drained
  • 4 cups chicken broth
  • 1 cup small pasta shells (such as ditalini or orzo)
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste
  • Parmesan cheese, for serving (optional)

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic, carrots, and celery to the pot and cook until the vegetables are softened, about 5 minutes more.
  3. Stir in the diced tomatoes, cannellini beans, Great Northern beans, and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add the pasta shells and cook according to the package directions.
  5. Stir in the parsley and season with salt and pepper to taste.
  6. Serve immediately, topped with Parmesan cheese if desired.
