Ingredients:

1 cup fresh raspberries

1/4 cup granulated sugar

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

1/2 teaspoon vanilla extract

1/2 cup cocoa powder (for rolling)

Directions:

In a small saucepan over medium heat, combine the fresh raspberries and granulated sugar. Cook, stirring occasionally, until the raspberries break down and the mixture thickens, about 10 minutes. Strain through a fine mesh sieve to remove seeds, and set aside to cool.

In a medium saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for 2 minutes, then stir until smooth and fully melted.

Stir the raspberry puree and vanilla extract into the chocolate mixture until well combined.

Refrigerate the mixture for about 1-2 hours, or until it is firm enough to scoop.

Using a small cookie scoop or your hands, shape the mixture into small balls and roll them in cocoa powder to coat.

Place the truffles on a baking sheet lined with parchment paper and refrigerate again for at least 30 minutes to set.
