Ingredients:

  • 1 pound ground lamb or beef
  • 1 onion, chopped

  • 2 celery stalks, chopped

For the cauliflower mash:

  • 1 head of cauliflower, cut into florets
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Make the filling: In a large skillet, brown the ground lamb or beef over medium heat. Add the onion, carrots, and celery and cook until softened. Stir in the tomato paste, beef broth, red wine (if using), thyme, rosemary, salt, and pepper. Bring to a simmer and cook until the liquid has mostly evaporated.

  4. Assemble the shepherd’s pie: Spread the meat mixture evenly into a 9×13 inch baking dish. Top with the cauliflower mash.
