FRIED CORNBREAD SOUTHERN CORNMEAL HOECAKES
Ingredients :
2 cups self-rising cornmeal
½ teaspoon kosher salt
2 cup boiling water
¼ cup bacon drippings for frying
¼ cup vegetable oil for frying
Instructions :
Step 1:Mix cornmeal, salt, and water together in a bowl, not to be too dry. Heat bacon drippings and oil in a cast iron skillet until it is almost smoking.
Step 2:In the oil, drop 2 tablespoons of cornmeal mixture and allow to brown for about 2 minutes or until the golden crust forms around the edges of the cornbread, then turn the other side and do the same. Do this for all and remove to a paper towel to drain and serve hot.
