Ingredients

For the Cookies:

4 oz unsalted butter, at room temperature (115 g)

4 oz granulated sugar (1/2 cup or 115 g)

1 large egg, at room temperature

1 oz unsweetened cocoa powder (1/3 cup or 30 g)

5.5 oz all-purpose flour (1 cup or 150 g)

Pinch of salt

For the Chocolate-Malt Frosting:

4 oz unsalted butter, at room temperature (115 g)

1 cup powdered sugar (120 g)

2 tbsp unsweetened cocoa powder

2 tbsp malt powder (optional)

2-3 tbsp milk (as needed)

For the Chocolate Coating:

8 oz semi-sweet chocolate, chopped (about 1 cup)

1 tbsp vegetable oil (optional, for smoother melting)

Instructions

For the Cookies:

Preheat the Oven:

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Make the Cookie Dough:

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg until well combined.

Mix Dry Ingredients:

In a separate bowl, whisk together cocoa powder, flour, and salt. Gradually add to the butter mixture until combined.

Shape and Bake:

Roll the dough into small balls (about 1 tablespoon each) and flatten them slightly. Place on the prepared baking sheet and bake for 10-12 minutes, or until set. Let cool completely on a wire rack.

For the Chocolate-Malt Frosting:

Make the Frosting:

In a bowl, beat the butter until creamy. Gradually add powdered sugar and cocoa powder, mixing well. Add malt powder (if using) and enough milk to achieve a spreadable consistency.

Assemble the Tim Tams:

Fill the Cookies:

Spread a generous layer of frosting on the flat side of one cookie and top with another cookie, flat side down. Repeat until all cookies are filled.

For the Chocolate Coating:

Melt the Chocolate:

In a microwave-safe bowl, melt the chopped chocolate and vegetable oil in 30-second intervals, stirring until smooth.

Coat the Tim Tams:

Dip each filled cookie into the melted chocolate, allowing excess to drip off. Place on a wire rack or parchment paper to set.

Chill:

Let the Tim Tams cool in the refrigerator for about 2 hours to set completely.
