Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 ripe bananas, mashed
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup creamy peanut butter
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour

Instructions:

  1. Preheat oven to 325°F (163°C). Grease a 9×13-inch baking dish.
  2. In a bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared dish to form the crust.
  3. In another bowl, combine the mashed bananas, cream cheese, sugar, and vanilla extract. Mix until smooth.
  4. Add the eggs one at a time, blending well after each addition.
  5. Mix in the peanut butter, sour cream, and flour until fully incorporated.
  6. Pour the cheesecake mixture over the crust in the baking dish.
  7. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
  8. Allow the bars to cool at room temperature, then refrigerate for at least 2 hours before cutting into squares.
