Lazy Girl Pecan Pie Bars
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1/4 tsp salt
2 cups pecans, chopped
3/4 cup light corn syrup
1/2 cup brown sugar, packed
2 large eggs
1 tsp vanilla extract
1/4 tsp ground cinnamon
Directions:
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
In a medium bowl, mix the flour, granulated sugar, melted butter, and salt together until combined. Press the mixture into the bottom of the prepared pan to form a crust.
Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden brown. Remove from the oven and set aside to cool slightly.
While the crust is cooling, prepare the filling. In a large bowl, whisk together the corn syrup, brown sugar, eggs, vanilla extract, and cinnamon until smooth.
Stir in the chopped pecans until they are evenly distributed.
Pour the pecan mixture over the baked crust, spreading it evenly.
Bake the bars for an additional 25-30 minutes, or until the filling is set and golden brown.
Allow the bars to cool in the pan for about 30 minutes, then refrigerate for at least 2 hours before cutting them into squares.
Once chilled, cut into squares and serve.
