Garlic Butter Salmon and Asparagus in Foil

Ingredients:
• 2 salmon fillets (about 6 oz each)
• 1 bunch of asparagus, trimmed
• 3 tablespoons melted butter
• 3 cloves garlic, minced
• 1 tablespoon lemon juice
• 1 teaspoon lemon zest
• 1 tablespoon chopped fresh parsley (plus more for garnish)
• Salt and black pepper to taste
• Lemon slices, for garnish
• Optional: red pepper flakes for a little heat

Instructions:
1. Preheat Oven:
• Preheat your oven to 400°F (200°C).
2. Prepare the Foil Packets:
• Cut 2 large sheets of aluminum foil.
• Divide the asparagus evenly between the two sheets and place the salmon fillet on top of each pile.
3. Make the Garlic Butter Sauce:
• In a small bowl, mix melted butter, minced garlic, lemon juice, lemon zest, parsley, salt, and pepper.
4. Assemble:
• Pour the garlic butter sauce evenly over each salmon and asparagus packet.
• Add a slice or wedge of lemon on top of each.
5. Seal and Bake:
• Fold the foil over the salmon and seal tightly to create a packet.
• Place the foil packets on a baking sheet and bake for 18–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
6. Serve:
• Carefully open the foil packets (watch out for steam!), garnish with fresh parsley and extra lemon if desired.
