Spicy Chili Garlic Deviled Eggs
Ingredients:
12 large eggs
1/3 cup mayonnaise
1 tablespoon Dijon mustard
1 1/2 tablespoons chili garlic sauce (adjust to taste)
1 teaspoon smoked paprika
Salt and pepper, to taste
1/4 cup crispy fried onions (for topping)
1 tablespoon fresh chives, finely chopped (optional, for garnish)
Directions:
Boil the Eggs:
Place eggs in a large saucepan and cover with water. Bring to a boil over medium-high heat. Once boiling, remove from heat and let eggs sit covered for 10-12 minutes.
Transfer eggs to an ice water bath to cool, then peel and slice off the tops to create upright egg cups. Gently scoop out yolks into a mixing bowl.
Prepare the Filling:
Mash yolks with a fork until smooth. Add mayonnaise, Dijon mustard, chili garlic sauce, smoked paprika, salt, and pepper. Mix until creamy and well combined. Adjust seasoning to taste.
Fill the Eggs:
Use a piping bag or spoon to fill each egg with the yolk mixture, creating a generous mound of filling.
