Authentic Mexican Carne Guisada 

Ingredients:


2 lbs beef stew meat (cut into bite-size pieces)


2 tbsp vegetable oil


1 medium onion, diced


1 green bell pepper, diced


3 cloves garlic, minced


1 large tomato, diced
1 tsp cumin


1 tsp chili powder


1 tsp paprika


1 tsp ground black pepper


Salt to taste


3 cups beef broth


1/4 cup flour (to thicken, optional)


Instructions:

Brown the Beef: In a large pot or skillet, heat the vegetable oil over medium-high heat. Add the beef and cook until browned on all sides.


Add Vegetables: Add the diced onion, green bell pepper, and garlic. Sauté for about 5 minutes, or until vegetables are soft.
Seasoning: Stir in the diced tomato, cumin, chili powder, paprika, black pepper, and salt. Mix well.


Simmer: Pour in the beef broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
Thicken (Optional): If you prefer a thicker gravy, mix the flour with a bit of water to create a slurry, then stir it into the pot. Cook for an additional 10 minutes until the sauce thickens.


Serve: Serve hot with warm flour tortillas, rice, or beans.
