Baked Cheese Sandwiches (Cheesy Melts)

Ingredients (for 6 sandwiches):
• 12 slices of sandwich bread
• 2 cups shredded cheese (cheddar, mozzarella, or a mix)
• 6 slices of sandwich cheese (optional, like Emmental, Gouda, or processed cheese)
• 2 tablespoons mayonnaise or softened butter (for spreading)
• 2 eggs
• ½ cup milk
• Salt & pepper to taste

Instructions:
1. Preheat Oven:
• Preheat your oven to 375°F (190°C).
2. Prepare the Bread:
• Lightly butter or spread mayo on one side of each slice of bread.
3. Assemble Sandwiches:
• Place 6 slices of bread (buttered side down) on a baking tray lined with parchment paper.
• Add a slice of sandwich cheese or a generous handful of shredded cheese on each.
• Cover with the remaining slices (buttered side up) to make sandwiches.
4. Make Egg Wash:
• In a bowl, whisk the eggs, milk, salt, and pepper.
